Raw Rasoi: Food entrepreneur creates rawsome recipes for India’s vegans

For the uninitiated, raw veganism, a plant-based diet that involves no cooking is the new phenomenon taking the world by storm. Proponents of this food regime eat only raw fruits and vegetables and Raw Rasoi, a unique website, caters exclusively to the needs of these foodies, offering raw vegan juices and shakes, and food recipes and diet charts.

Raw Rasoi was started by Rupinder Kaur after the founder found herself in need of a drastic lifestyle change. In July 2012, she fell sick with jaundice, while digestive issues and chronic pain added to her difficulty. A friend recommended she try a diet of fresh fruits and vegetables for three days and the results were immediate. Within a couple of days, her health challenges dissipated and she felt her energy levels increasing; the benefits of eating a raw, plant-based diet were evident and Kaur never looked back.

She started Raw Rasoi, a website on vegan recipes. Here, you can find instructions on making creamy avocado bites, pastas made out of zucchini ribbons, coconut ladoos and even water melon popsicles.

Kaur also holds regular workshops and has written a book titled ‘Start Your Day Raw’ to guide new raw vegans and increase awareness on a raw food lifestyle and its health benefits.
